One of my New Year’s resolutions this year was to learn to make a “really great” chicken noodle soup for cold Winter days and Cold and Flu season.  I figured it was a good Mom-Goal.  After making it several times I realized that my God it takes a good half day if you are really going to do it right.  And of course when you are sick the last thing you feel like doing is making homemade soup so I’m going to freeze several bowls for the future for that very reason.  There is nothing like a bowl of steaming hot chicken noodle soup for a -1 degree day in Chicago.  I add mushrooms to my soup and a lot of chicken so you can adjust this recipe according to what you like but I have to admit it’s better than “really great.” One resolution conquered!! What’s next?!

Chicken Noodle Soup Recipe

Chicken stock ingredients:

1 whole chicken – 3-5 pounds

Couple of carrots and stalks of celery rough cut

An onion rough cut

Head of garlic

Bay leaf

Salt and pepper

Two tablespoons of fresh thyme

PLUS: (for the actual soup)

Olive oil

2 carrots and 2 stalks of celery

Cup of mushrooms chopped

Bag of egg noodles

2 tablespoons of fresh thyme

4 garlic cloves

1 onion chopped

2 cups of shredded chicken

Parsley

Chicken Stock Recipe:  Rough cut the carrots, celery, garlic, onion, thyme and throw into a big soup pot. Wash the chicken and take out the giblets and place over the vegetables.  Fill the pot with water so it covers the chicken.  Add salt and pepper. And a bay leaf.  Bring to a boil.  Then lower the heat and simmer for TWO HOURS.  (This is where the magic happens).  After the two hours take the chicken out and wait for it to cool and then shred all the chicken.

Then in a separate pot, coat the bottom with olive oil (2 tablespoons) and sauté carrots, celery, garlic, onion, and mushrooms until softened.  Take a colander or a sieve and place over the pot and carefully pour the “stock” into the soup pot.  You will discard the solids from the stock…and all that will be poured in is the liquid gold. Then bring the soup to a boil.  Once it is boiling add the pasta and cook for 6-8 minutes.  Then add your shredded chicken. Salt and Pepper to taste. Serve hot with chopped fresh parsley. Delicious!!

    I’d rhetorically ask if you know how good that looks but my main fear is smart phones may be consumed by mistake! Great photography, recipe and inspiration to try more from my larder than instant oatmeal…Brava!
